Its nectarine, nectarine, peach aromas are the result of the solubilization of the mother rock by the roots of the vine. After a whole bunch pressing, the juice is vinified without the addition of sulfites, before being distilled on lees in our Charentais stills. The reduction is made with local spring water to reach the optimal degree defined by Dimitri Mendeleïev: 38% vol.
