This cognac contains 200 mg/L of esters. That is three times more than the rate obtained with a classic distillation on lees. It is the Maillard reaction between the lees and the copper of the alembic during the cooking of the toasted wine that allows this exceptional extraction of esters. This unique technique gives DOUBLE-LIE an incomparable aromatic intensity.
